This what you saying is that when you have flipped cover back of phone then clock is activating itself and you can't use phone.
As you know to activate cover features there is small magnet placed in cover.
Please put finger on inner side of front cover and you should feel magnet in centre of right edge.
By my opinion sensor is too sensitive or magnet is to stron and when you place magnet on rear of phone then phone is thinking that cover is closed.
If your cover is working correctly then is no other explanation and you need brake magnetic field. To do this please place small piece of kitchen aluminium foil between back of phone and cover on same place where magnet is placed in cover. This will be stupid placed on outside of cover as will look very bad.
But if cover is not working correctly then is big possibilities that magnet is placed incorrectly in to cover and that why is working incorrectly and solution will be, asked seller to replace or refund. Or remove magnet and place other way around.

Not sure how non-magnetic aluminium foil will break a magnetic field.

The aluminum foil thingy didn't work.

The magnet is correctly placed. It's the phone. Duplicated the symptom using a stand alone magnet. Same results. If the magnet is in upside down position, the lock screen cannot be activated.
The sensor is located near the volume rocker.

A such magnetic cover is not meant to be flipped over, that's not a correct usage. Please use it correctly by flipping it 180 degrees only and it will work without any issue. Pull off your phone from the cover before you put it into a car holder.
