I think it would be a great idea to release what they have, even knowing MTK, because more people, including developers, will be implicated on the development of the ROMs for the devices, giving UMI better marketing and the users a better opinion of the brand.

I would like to, but I have the bad feeling that there is are no developers between us who were able to compile better ROM from the kernel source. (I'm talking about the Iron)

I personally would love to see the release of these items, I have always found custom roms better than anything made by company that develops the devices. The various features that the community develop and incorporate are great.

I have found that custom roms extends life of device and more updates than makers of phone.

There is the possibility, but at least there is a chance if the sources are available.
I have a little experience on it, and with the sources I could try and develop a custom rom.

I would also like UMI to release the source code so devs that hopefully help fix the dreadful UMI Rome the V3.03 update has done nothing to improve the shocking battery life on this phone, the specifications that UMI released prior to the release date are not even close to what the company said. When using the phone I'm lucky to get 5 hours of medium usage which isn't good enough. I'm sorry to say this will be my first and last UMI branded phone I will go back to Xiaomi or try Meizu.

UMI is probably not allowed to release their source codes by the contract with MediaTek. The Rome unfortunately seems to be a failure (screen, battery etc. issues) but generally you should compare the quality and support of UMI products to other brands and models in the same price range.

In terms of support we have the examples of Motorola and their Moto G and E.
And fot example Lenovo released source code of MediaTek smartphones, like the S650 that I had before, it was little but there it was.

We still have the "clicking" sound while hearing something with headphones.

You're talking about giant companies as examples. UMI is definitely not a such one.
The clicking noise issue must be related to the hardware and if that's the case, it cannot be solved by tweaking the ROM. It can be made a little bit better (that's already done as far as I know) but nothing more.
