No cellular data on Nougat!

Did you check IMEI numbers.
Settings - about phone - status - IMEI informations

Yes. I did a factory reset right after the update. My APN is mobile.vodafone.it

I just wondering is you network third party or main. If is third party you need go to settings - more - mobile networks - data roaming.
If all this solutions not help you need flash your phone with SPFT as probably due to OTA update you got some bug/error in system.

We are already quite a few users on this firmware and with perfectly working mobile data connection - personally I'm also a Vodafone user but in a different country, of course.
Please check in 'Settings --> Data usage' whether Cellular data is enabled or not. It might be disabled.
As a rare occasion your carrier might identify your device as a tablet or desktop PC. In that case use web.omnitel.it as the APN.

Tried to change APN to Omnitel but it's the same.
Can I do the manual OTA to nougat again or do I have to downgrade first? Never used flash, might screw up.

Update: Now when I go in about phone->firmware upgrade, I get a completely blank page and can't do anything..

I don't know will you be able overwrite previous FOTA update as this is exactly same zip file. Only maybe during your last downloading you got some error in file.
