That's not sure whether you can update a beta version via OTA (surely not if you have TWRP and/or root installed) but even if you flash the final version with SP Flash Tool, you can do it without flashing the userdata partition (the last one) to keep your user data.
Why is this Rom Rooted? now one of my apps for paying for stuff won't work since it doesn't approve rooted phones, is there anything i can use to go around this problem?

Try using hide my root app from playstore if that can help but plz make sure you follow the instructions. Otherwise the only best solution is to flash back the latest official firmware of 6.0
