using the official umi flip cover phone case, the one with the magnet in, if i hold the flip cover hard against the back of the phone, with my finger pressed to the screen the 'S View Setting' screen comes on, and, STAYS ON, how great is that, vis:

Probably proximity /light sensors picking up your s-view cover from back of phone.

Funny you should ask that, but no,of course the official umi cover does not have the 's view' window in it, but if I almost close the cover and peek in sideways I can see the screen
So , is this 's view' crap part of A7 or something umi have added, and if so why?

I can't answer for your questions as I don't have this cover but if this cover activated some other futures you should go to settings and maybe change some to be not switching on clock on screen.

This what I found from Ben engineers made mistake and add this option in to A7. As there is no s-view cover (with window) available and probably will be never available for umi super this option (hopefully) will be removed in further updates.

Never say never. If some case producer finds out about this feature, maybe they will make some cases to explore this unintentionally added feature. I would like to have this on my Max.
