Will i receive the official OTA, if i flash the Android 7 beta manually? Is there still a realease date of the OTA for the Z, or Z Pro? Because if it will be released in the next few days i would skip the manual update.

No, if you are on a beta version, you'll have to flash the first final release with SPFT since wireless update is not available in the beta versions. Then after flashing the first final version, you'll be able to receive future OTA updates.
The Android 7.1.1 release is still in development, release date has not provided but it must be issued in a few weeks. Don't expect only a few days.

If this would be the first time for you to flash with SP Flash Tool, I don't recommend to do that.
