You can backup single or selected partitions if you want. To backup EFS is essetial, obviously the most important task since that contains the unique IMEI numbers and baseband data of your phone. The Data partition contains everything that has changed since you started your phone for the first time from its factory state. The system partition might contain changes if you've installed SU binary or Xposed framework for example. To backup the Boot, Recovery and Cache partitions (especially the latter two ones) is virtually pointless.
Even if you move your backup to a computer or external storage drive, that's important to keep the original folder structure of your backup. To create a backup or restore a backup stored on an external micro SD card can cause issues, so I recommend to use the internal storage of your phone, then you may move or remove your backup after you don't need it on your phone anymore.
