unfortunately when I flash my phone with one of these ROMs it does not stop to restart, an idea to avoid that?

wipe data,cache,dalvik and system and install gsi rom in system imageIf it does not go after umidigi first logo boot, restore the boot partition. If it reboots after the second umidigi logo boot install gsi system image again.

Can I do it with SP Flash Tools? I have some problems with TWRP: when I start the first time after flashing it instead of the old recovery it starts perfectly but when I try to start again it marks me something like "unknown command" or something close with a green android robot, so I have to reflash TWRP to reuse it.

That happens because your device is not rooted with magisk. After root, you can have your data partition decrypted (for backup) and also use TWRP else after reboot it will disappear.
If you decide to root it, make sure you use sp flash tool with the patched boot.img for the device to remain certified(on oreo). After that you can use twrp to install or backup or restore other stuff.

It's funny because I had uninstalled Magisk precisely because I thought it was necessary to have a clean ROM before installing a ROM GSI lol. Thank you! xD

Umidigi logo stays on for 5 minutes then the phone goes into fastboot mode and the system does not start

edit : I tried to flash the system using Phh-Treble gsi (pixel experience is based on it) and it seems to work. But the ROM detects only 8GB of storage (while the umidigi One Pro has 64).

new edit : Thank you, I retried and it is working with Pixel experience and Magisk (but ctsProfile and basicIntegrity are false, I think it's normal).
