Unfortunately we suspecting that this can be not possible to do and we are sorry for this inconvenience.
1. So, if we flash it to Android 8.1 we aren't able to use Google apps?
2. Would it be possible to register it ourselves?

Maybe not the correct topic but anyway:
4. Will be the fingerprint issues fixxed with Android 8.1? I bought the 64GB limited editon from amazon 2 weeks ago, and every app that saves the fingerprint deletes it after a reboot of the phone (for example the app "Blockchain" from blockchain.info with the error: "the key was canceled" ). (There aren't any software updates available)
