Today a new FOTA was pushed out (V3.03-20160423).

For me it fixed:
a) LTE signals
b) Battery drain when in idle
c) Camera startup time

I have not been able to check the touch sensitivity of the screen so I am not sure this has been fixed yet.

This solution works but you have a different problem. If you read the posts of other users, you could see that, they talked about the failure of the recovery when opening the update.zip file, they didn't get stuck at the beginning like you.
Your case is unique and I cannot reproduce it. Maybe that's caused by a running background app or a damaged cache content or anything else.
I suggest you to process a factory data reset and try again. If that doesn't help, you can flash the complete updated firmware with SP Flash Tool. I've already uploaded this newest version.

Further changes:
d) No more automatic language setting by SIM card
e) Improved fingerprint sensor handling
f) Improved touch screen sensitivity
g) Improved storage handling: the internal memory and an installed memory card can work as one, unified storage from now

One minus: Google Play Store still stops if you try to make a purchase while fingerprint samples are set.

Unfortunately the touchscreen issues are still present...

I'm sorry but what do you want to prove by this screenshot? This app draws a such line on any kind of touch screen phones. The density and evennes of the blue dots depends on the speed of your drawing. If you lift up your finger, there will be a gap in the line on any phones.
I've got a Touch in hand and after installing the latest update, the sensitivity of the touch screen has obviously been improved. If you haven't done it yet, I suggest you to remove the factory screen protector.

What about the WiFi that turns on and off?

No such issue, not even in earlier versions. If you have a such problem, then it's a unique malfunction of your phone. Maybe the antenna board should be fixed. Check this post: http://community.umidigi.com/forum.php?mod=redirect&goto=findpost&ptid=2696&pid=19232&fromuid=974

I'm not sure if I understand your question. That's an option to use the SD card as an internal storage but not an obligation.

It seemed obvious to me. The screenshot shows the effect of making three loops with a SINGLE line. I never stopped touching the screen while drawing it. The broken line is exactly what I'm complaining about. It happens a couple of times every sentence I try to type with Swype keyboard, making the whole effort completely unreliable. Most of the attempts of drawing more sophisticated shapes end with breaks in random parts of the screen in random intervals.

I had to remove the factory screen protector right away after trying to use the phone for the first time since it was of a very low quality, misaligned and there were some dust particles beneath it.

If your phone has an unresponsive area on its touch panel, then it's the sign of a unique hardware defection, that cannot be resolved by a software patch, so your issue is not related to this topic. If you have a such problem, I suggest you to contact your reseller for a replacement. To ensure you, I attach a screenshot of my UMI Touch that I captured right now.

My point is - the aforementioned (it took me 5 attempts to type that word due to described problem - Swype assumes that I started new word in the middle of the old one) breaks are random. They don't always appear in the same area of the screen. If I try to replicate your test pattern, generally 2 out of 5 results (of such series of three lines each) are expected to turn out faulty.
