I just wondering did you try previous version of  stock camera app?
The previous version is not bad is very fast for focusing, just quality is small bit worse.
Maybe you will be happy with previous version.
I found that picture made by umi super are displayed in different quality directly on phone than on wireless screen (way brighter and colors are way dip)

I noticed this problem too, pictures are very dark with other apps.

And I have another problem with the stock camera, in the dark the camera is very very slow, framerate when i record is arround 10 fps.

Yes you need flash to previous ROM.
But currently I am back to older ROM 20160708  as this one was the best for me, touch screen is very sensitive on table and finger print /screen switching on is very fast as should be.
I flash with SPFT and to not lose some screen/touch dricers,  apps,  and data I unchecked preloader, cache and user data.
All is working correctly in my device just I have previous version of stock camera app.

Camera

Picture quality and video quality is good on bright daylight. You can capture decent photos and record decent videos on a bright sunny day

Picture quality and video quality on dark environment/low light is just bad. Almost unusable. Especially on video. It is laggy as the cheapest android cameras out there and you will fail to recognize anything when moving the phone while recording.

My samsung galaxy w from the year 2011 can outperform my umi on low light video recording
