Off to the US soon and am wondering if my Plus E will work there. In engineering mode the LTE mode bands needed for the various US carriers are greyed out and the boxes can't be ticked. Any advice anyone?

Sorry but to support the US LTE bands a different hardware modem would be needed, it's not about just a software setting. Only future UMIDIGI models (with Snapdragon or MTK Helio X30 or later processors) will support the LTE bands used in the American continents.
