how do I force a 4g only connection? if I set to lte only in service menu the phone still connects in 3g when there is a 4g network available.
(there's a screenshot coming)

There is no other option to force only Lte. You can try top right corner three dots and radio bands and try other options as euro, aus (there is no point trying USA)

You can type in *#*#3646633#*#* then telephony - band mode - sim - and uncheck other than Lte bands.
Also in telephony - network selection - sim -

so why doesn't the service menu work? whats the point of being able to choose and the phone just ignores your choice.
or why does the phone not use an available 4g connection? this makes the the phone useless when or if the only available network is 4g you get no network. It does work with 4g it has connected for a few seconds then drops back to 3g.
could all this be solved with a software fix and will umi do so

I don't know why you have such issues with 4G network but we definitely not facing with such issues.
I have 4G and sometimes will drop to 3G when I want make call or use data because phone picking up not strong enough 4G signal and calculating that the 3G will be faster than weak 4G.
This is full explanation.
Maybe you should change your Sim card to latest one or change network supplier. Also if you using third party network provider then you will face such issues.
You can contact to seller if you thinking that this is hardware issue or wait for next update.
Also you can try flash your phone with SPFT
