The firmware upgrade method doesn't risk the health of your phone (if you use a stock ROM) but always ensures a successful flashing process. The donwload only option doesn't do it always (so sometimes yes, especially if the user memory is empty), since that doesn't format the partions before flashing, just writes the new content, simply overwriting the existing one.
The difference between the 'Format All + Download' and the 'Firmware Upgrade' options is that, the former one formats the whole flash memory (you should avoid that), except the preloader area, while the latter one just formats those partitions only, that wil be rewritten.

The SPFT never lets you overwrite the existing preloader by an incompatible one - it checks the partitions before formatting and writing. However, if you did that somehow or you formatted the whole flash chip, that would permamently brick your phone. Since the size of the preloader is just a few kilobytes, SPFT needs just some fractional seconds to write it. Theoretically if you get a black out or your computer freezes in that very short period, that also can brick your phone but of course, the real chance of that is almost nothing.

so i could try to install the 3.04 rom via SPFT selecting Firmware Update (preloader is select automatiquely) without prob and i could root my phone after?
In this thread http://community.umidigi.com/thread-2546-1-1.html he said "Always flash this ROM with choosing the 'Firmware Upgrade' option."

Yes, you may try it but after flashing this official firmware, your phone should be factory rooted, you don't have to root it again.

You won't have any risk formatting with firmware upgrade even if preloader is checked. In fact in FT options ( format options ) the format all except bootloader is checked by default.
