Clearing the FOTAProvider got the update to download but it fails to install with the bootloader reporting there is not enough free space on /system to install the patches.

Ah, a fix for 'not enough free space on system' - reboot to recovery and clear the cache (nothing else).  Reboot, retry the OTA update and it will work.

This update has been a pretty terrible experience to install!

Any recommended tools to make a full backup of all my data and settings for both internal and sdcard ...

You can make it with TWRP recovery. PLease check the following page.
http://community.umidigi.com/thread-2962-1-1.html
You can flash TWRP with flash tool, create the backup, then flash back the stock recovery to be able to receive the FOTA updates.
You can't backup the SD card and that would be pointless to do it with the phone but you can use any kind of Windows/iOS/Linux etc. file manager to do it after you connected your phone to computer USB.

Hi,

Go to settings - Apps - Show System

Thanks a lot, the clearing of the FotaProvider data fixed it !
I also had to clear the cache after this, because I got the 'not enough free space on system' as well.
I agree with dangel, this is not an easy update
