I need help, I am very nervous.

I installed the TWRP recovery with Rootjoy and I had no problems. After go to recovery mode to install the Gapps http://opengapps.org/ I installed the ARM 64 5.1 STOCK. Then I press restart and remains in the Android logo and goes no further. If I connect to ROOTJOY detects it and I can see the files. But don´t start. I need help please.

Sorry form my english

Then you haven't lost your nvram partition by the formatting.
The sound issue is not software related. Using higher impedance (32 ohm or higher) headphones might reduce that noise, but most in-ear headphones has just 16 ohm impedance.
