I guess you mean the "other area" or non-EEA ROM. There's a version for residents of the European Economic Area and another one for everybody else. The two versions are interchangeable but there's no difference, except some Google certificates. If you live in the EEA (EU countries + some more), it is recommended to keep the EEA version software, otherwise you should use the non-EEA version, even if you live in Europe but not in the European Economic Area.
Thank you for the update but I noted that the security patch level for Android is still locked to October 2019.

Try disable "OK Google", here the steps:
- Press continued Home button
- Slide up to full screen
- click your image account, corner up right
- Assistent (second)
- Phone (in Devices - Assistent)
- Disable "Ok Google" in "Voice Match"
