You can do it without data reset (read the SP Flash Tool tutorial) but a clean install is recommended if you change from factory ROM to basic edition.

No, only the basic editions (any of them) make it possible to change the default launcher.

Why my UMIDIGI S2 Pro don't receive all updates automatically via FOTA method, despite the fact that the last update was released a month ago (I am from Azerbaijan ) ? I did last update via OTA method, but now it's not available.

You have installed the latest version (V1.0_20180117) currently available via OTA. Always check the kernel date (Wed Jan 17 in your case) to see the real status. The OTA update for this latest (V1.0_20180201) version will be available in a few days.

Check the kernel date to know your real version. The build number is the same in all the last three versions.
